Tāwari Honey Marshmallow - a special honey sweet!
This honey marshmallow is so easy to make – made with our delicious – Tawari Honey. A delightful sweet to make for the family when you just need something, well, a little sweet. The taste of the Tawari Honey really comes through in this marshmallow, so you can enjoy that butterscotch hint!
You can keep these Tawari Honey Marshmallows for weeks in the fridge or for months in the freezer, so you can always have them around for that sweet treat.
Get creative when you make them – different shapes for different occasions, use chopped nuts for a coating, shape up and dip in or drizzle with chocolate for Easter Eggs… lots of possibilities.
If you haven’t made sweets or marshmallow before, do not fear! This recipe is so simple to mix and make. You can bring the kids in to learn how to make it – fun time in the kitchen.

Ingredients
2 ½ tbs gelatin
½ cup of cold water
¾ cup Manawa Tawari Honey
1 tsp vanilla essence
1 cup sugar
1 cup water
Directions
Soak 2 ½ tablespoons gelatin in ½ cup of cold water for 10 minutes.
Dissolve the Tawari Honey, vanilla essence, sugar and water in a pot with a heavy base, over gentle heat to make a syrup
Dissolve gelatin mix over hot water and add to the syrup. Bring to a gentle boil and boil steadily for 15 minutes (Do not boil too hard or stir occasionally so that it does not burn on the bottom, Allow to cool until lukewarm.)
Beat hard for 5-10 minutes until very thick and white.
Add food colouring if you wish (but we don’t) and beat well to mix through.
Line a large tin with baking paper and wet the baking paper
Pour the mixture into and smooth off. Chill to set, best for overnight or at least 6 hours.
Cut into squares and roll in coconut, finish with toppings such as chocolate as you wish.
Notes
This honey marshmallow is best made with Tawari Honey which is a light honey with a hint of butterscotch or liquorice (depending on your palate!) If you really like Pua-a-Tane Wild Forest Honey or Rewarewa Honey or this is what you have in your kitchen then go ahead and try it – the flavour of the honey will flow through to the flavour of marsh mellow.
We don’t recommend Manuka Honey for this recipe as it can tend to have a strong medicinal taste that does not suit honey marshmellows!
You can vary the amount of honey in this recipe to your preference – more honey, less sugar
